One of the employees at Hi-Times talked me into buying a bottle of Herbsaint cuz they were outta Green Chartreuse. My plan was to fix up a couple of “Last Words” as a nightcap. I did a side by side using the Chartreuse vs. the Herbsaint. Not even close. You get a totally different and not very good drink using the Hertbsaint. Another bottle taking up space in the SharkBite Bar.
Cheers

Herbsaint tastes a lot like absinthe. One time I was telling a bartender (at a not-very-good bar) how to make a Last Word, and since I'd already had a couple cocktails at that point, I accidentally said absinthe instead of chartreuse. Of course it wasn't good. However, I think if you just cut the absinthe in half, it might actually be really interesting. Herbsaint should work the same. I haven't actually tried it yet, but since you have that extra bottle in your bar, maybe give it a try sometime when you're feeling experimental.

BelowDecks, JenTiki- mahalo for the heads up. I found out the hard way. They're not even close. Strong licorice taste.
Cheers

It would work as a substitute for any drink needing an absinthe rinse or a few drops/dashes of absinthe, i.e., a corpse reviver no. 2. Not necessarily the best for it, but not bad.

Yep, it works in place of absinthe or Pernod in a Sazerac.

Staying away from the Herbsaint this evening.

First an Aviation Cocktail, then a Bird of Paradise for dessert-both gin based.

Look at it this way, nui 'umi 'umi: now you can make what Martin Cate calls one of Donn's secret weapons, "Herbstura," which is equal parts Herbsaint and Angostura bitters. Check out the Smuggler's Cove book for more.

Bourbon mulled cider.

Original recipe from here: http://www.pbs.org/food/fresh-tastes/bourbon-mulled-cider/

16 fl ounces unfiltered spiced cider
6 fluid ounces bourbon
2 tablespoons light brown sugar
1/2 navel orange
1/2 lemon
1 star anise
4 cardamom pods
1 bay leaf

To a medium saucepan, add all of the ingredients. Stir and place it over medium-high heat until it reaches a gentle boil.
Bring the heat down to low and cook until fragrant and delicious, about 5 minutes. Turn the heat off and cover the pot.

After doing the demerara "challenge" we determined (not surprisingly) that El Dorado 12 was the smoothest of the bunch and the best candidate as a sipper. I had diluted a few ounces of red label LH151 down to 80-proof to throw into the mix and we found that to have more character than ED8, the "Canadian" yellow label LH 80 I got in Vancouver last year, and Hamilton 86. So when we made the Hart of Darknesses and Demerara Floats we did one with El Dorado 12 and LH 151 and the other with the diluted LH151 along with full proof LH151 (In hindsight I could have just poured 1.5 oz of the 151 in the Hart of Darkness, which I believe is how the original recipe was written before the Tiki app.) In any case, the ED/LH151 blends were the better cocktail in both cases.
