I just found some baking idead for Trader Vic's Hot Buttered Rum Batter, perfect for spring when the weather gets too warm for Hot Buttered Rum, but is still cool enough for baking: Trader Vic's Chocolate Chip Cookies 2 1/2 Cups All Purpose Flour Preheat oven to 375. In a small bowl combine flour, baking soda & salt, then set a side. In a large mixing bowl combine Hot Buttered Rum Batter & vanilla and mix slowly while alternately adding pieces of the butter & sugar. After adding all the sugar & butter beat until creamy. Add the slightly beaten eggs. Gradually add the flour mixture. Drop by rounded Tablespoon onto ungreased cookie sheet. Bake at 375 for 10-11 minutes or until Golden. Makes about 5 dozen cookies. Rum Batter Banana Nut Bread 1 3/4 cups sifted all purpose flour Preheat oven to 350. Sift together first 4 ingredients. Add nuts & set aside. In mixing bowl add together Hot Buttered Rum Batter & eggs & beat well. Stir in mashed bananas, then flour-nut mixture, beating until just smooth. Pour into greased 9"x5"x3" loaf pan. Bake in 350 oven about 1 hour, or until until inserted toothpick comes out clean. Place on a rack to cool. |
