I don't think I ever told you I finally found the shop of the guy who carves those huge Indians you asked me about. His place is south of New Symrna Beach, pretty much where you said it would be. I drove by there a bunch of times and never saw it, then one day Marian and I were riding our motorcycle and holy cow, there was a giant wooden Indian standing by the side of the road.
