This recipe comes from a 1965 recipe book called FAVORITE RECIPES OF HAWAII. The book contains 500 recipes from Women's Club Leaders in Hawaii.

I made one and it's killer.

HAUPIA CAKE

1/2 c. margarine or butter
1 c. sugar
2 whole eggs or 2 egg yolks and 1 whole egg
1-1/2 c. sifted cake flour
3 tsp. baking powder
1/4 tsp. salt
1/2 c. coconut milk
1 tsp. vanilla or lemon extract

Cream Butter and sugar until very light and fluffy.

Add eggs and beat again until fluffy.

Sift flour with baking powder and salt.

Add dry ingredients alternately with 1/2 cup coconut milk and extract to creamed mixture;
start and end with dry ingredients

Pour into two oiled 9-inch cake pans.

Bake for 20 minutes at 350 degrees.

Remove cake from pans after cooling for 10 minutes; cool on racks.

FILLING:

1 pt. coconut milk
1/2 c. sugar
3 tbsp. cornstarch
1/2 c. water
1/4 tsp. salt
1 tsp. vanilla

Heat coconut milk to boiling.

Add sugar, cornstarch dissolved in water and salt.

Stir over medium heat until thickened.

Add vanilla and cool.

Spread filling between layers and on top of cake.

Chill until set.

FROSTING:

2 egg whites
1/2 c. white corn syrup
1 c. grated coconut

Beat egg whites until stiff.

Gradually add syrup, beating until frosting holds peak.

Spread on cake and sprinkle with coconut.
