The "cornerstone" of theme music for my TIKI bar is Jan Davis: Boss Guitar. I always have that playing at some point of the evening. While it's not exactly "TIKI"(except for Watusi Zombie, which is TOTALLY TIKI), it has a great blend of surf, twang, spy, flamenco, percussive, and kitch.
