And to continue the thread, I prefer a "Persian" type of lime above all else. I find key limes to be not juicy enough and ever so slightly bitter. And I think the Persian oil content as mentioned above is a huge plus. I have encountered some rather "piney" limes before which always confounds me. Last time I bought limes in Hawaii they all had a strange pine taste to the oil. I stopped shaking the shells with the mai tais and it improved the flavor considerably.
