AGAIN if you don't know the biz well get some experience on someone else's dime (asst. managing at a chain restaurant is an easy gig to get for an eyeopener) then try to spread your wings. Dreams are good if you are prepared and not FOOLISH with your (or other's) money like so many others have been.
