I used to be a Hotel Chef here in Denver and I am familiar with the corporate requirements that are put in place with regard to labor. All too often a hotel will come up short in the food and bev department when such a large group happens along. For this reason, I avoided the dining room so as not to be stuck waiting for my food or my check. My suggestion to fix this is to extend the operating hours and possibly the menu of the outdoor grill! This was a perfect alternative to expensive poolside or room service. T. F.
