You just spray it into the bottle. The inert gasses are heavier than air so they sink and form a layer above the top of the liquid. This thin layer of gas keeps the oxygen in the air from touching the liquid, thus "eliminates" oxidation. But I can no longer find a quote of how many bottles per can so take that with a grain of salt. For the lime tests, I was actually planning on using the Private Preserve, too.
