The episode did show some of the assembly, but only the finishing touches. The clam shell is two separate pieces that are held together with a big dollop of the chocolate if I remember correctly. They also showed how to achieve the "starburst effect" with the plating by using a couple of syrup squeeze bottles to make concentric rings, then taking a utensil and dragging out the "rays" to the outer edges of the plate. I'll have to attempt a re-creation at some point. If any of you beat me to it, let me know how your experiments go!
