That's pretty much the way I do it as well. But I'm lazy, so it seems like a lot of trouble to me. :) I think a light toast brings out a nice flavor. And it's richer than you can get from almond extract. It does come out pretty dark. More so if you use demerara sugar, which I really liked when I did. |
