I typically stock Noily Pratt, but Dolin is great and Cinzano works as well. If you don't think you are much of a red vermouth fan the Vieux Carre is one of the drinks that I think can make a convert of you. The others are a good honest Rye Manhattan and a Negroni which I think is may be the most perfect three ingredient cocktail ever. eta: and if you keep your vermouth in the fridge it will keep well for several months.
