Absinthe was an acquired taste for me (not a black licorice fan), but I have acquired it in a big way. A classic sugar and water abisinthe drip is like a delicious step back in time, and an Absinthe Frappe or a Cocktail à la Louisiane always hits the spot as well.

That said, I think the light touch with the absinthe in the Beachcomber drinks is the right balance for those drinks.
