What (I think) those places don't realize is that serving quality drinks may often be accompanied by selling MORE drinks. In other words, serving better drinks yields higher profit due to higher volume sold despite higher ingredient costs. But I could be wrong. Maybe the profit margins are so darn big on the crappy drinks that it wouldn't matter if you sold two or three excellent drinks instead of one crappy drink. Has anyone here operated a bar or restaurant or done the books (or financial analysis) on this sort of stuff? I know, I know, probably wrong thread to ask this. And that means - TIME FOR A DRINK! :)
