Re Cobra's Kiss: That one's a delicate balancing act. Just the right amount of Pernod will offset the sweetness, but too much will ruin it. The Mai-Kai's bartenders pull it off on an incredibly consistent basis.

Re my recipes: I have to remember to give credit to The Mai-Kai and Beachbum Berry for the inspiration, of course. Also, I try to go back to the original master (Donn Beach) to remind myself where it all started.

Re tonight: I'm having one of my favorites, Don the Beachcomber's Rum Julep from Sippin' Safari, in an attempt to figure out Mariano Licudine's version ...

I went with Appleton Extra and Lemon Hart 80 for the rums. Rich honey mix, plus Fee Brothers grenadine and falernum. Instead of pimento liqueur, I tried Don's Spices #2. Pretty darn close, but further research may be necessary.
