Maybe I posted this before? Maybe not here? Try using a 1:1 mix of Goslings 151 and Plantation Old Dark (not my idea - they did this at PKNY) as a dark over-proof option. It's not Lemon Hart 151. It's a great alternative with it's own character, that I came to crave. Jack |
