It's been awhile since I've reread this thread so I think in my mind I got confused on the lime juice issue but what you say makes sense. One question, how do you use the Everclear? To wash the bottle or do you add it to the syrup? That would be in additional to the overproof right? I think part of my problem was that the bottle I used was one of those swing top with a wire bail. It's a bit old so maybe the rubber gasket went bad. In other news, I got all the ingredients to make the recipe I posted earlier. I'll report back when I make it.
