Re Unfortunate pineapple rum experiments - maybe the pineapples need to be really ripe?

We have nipped over to Denmark for a long weekend, yesterday there was a lot of nice dark beers:

Followed by a trip to Copenhagen's Brass Monkey tiki bar:

We walked all day & found a bar with a champagne happy hour for my partner & some nice sipping rums for me:
