Trader Sam's uses cinnamon for the Uh Oa Bowl, fuel is Bacardi 151 on sugar cubes inside squeezed lime half.

Bahooka used lemon extract on croutons in a lime half (as I recall) for their flaming salad bowl...i mean flaming drink bowl. I forget the exact drink.
