Had a few friends over for drinks at the Hai'deaway last night, and per my usual practice, I pre-mixed all of the rum, syrups, and liqueurs to facilitate ease of bartending. As I had a no-show, there was a single serving of Nui Nui and Mai Tai mix left over, so on a whim today I decided to toss them into a shaker, along with the lemon juice, passionfruit syrup, and orange juice from a Lapu Lapu, and behold, the Lapu Mai Nui Tai was born. I have to say, it was eminently drinkable. The cinnamon, curacao, vanilla, and allspice combined beautifully into a very funky, spicy melange of flavors, and the blending of the 5-year El Dorado Demerara, 7-year Angostura, Ron de Barrilito, and Appleton Signature Blend rums was thing of beauty. I will definitely be making this again, and I like to think that in some small way, I've facilitated an polygamous, alcoholic marriage between Don the Beachcomber, Trader Vic, and the now-lost, lamented, Royal Hawaiian in Laguna Beach.
