My uncle clued me into this recent article from Smithsonian Magazine. Apparently it's titled "Time in a Bottle" in the print version, and found on page 58 of the April 2019 issue. Thankfully, it's also available online, because it's really interesting. It discusses the distillery tour (which I wish I could have experienced while I was in LA last week), and the patented "aging" process, all supplemented by some great photos.
