Demerara fans note - whole fresh pineapples are available everywhere now. A local grocer has two for $3. I picked up four and we made Boo Loo cocktails - taught a friend how to use a pineapple corer. The Boo Loo is an opportunity to use TWO Demerara rums. I used Hamilton 151 and El Dorado 5 year.

No pineapples? The drink may also be served in a large snifter. This is “option B” if you core a pineapple too deeply and pierce the bottom.

This drink is truly tiki goodness, and fun to make for guests.

Like an idiot I didn’t take any photos... But the pineapple season is still in full swing, and I’m likely to make it again soon.

Also did a search - we do not have a “pineapples” thread or a “Boo Loo” thread here. That surprised me considering how stunning of a presentation this drink makes. I may start a “cored pineapple drinks” thread and post some pics.
