I say wood.
Direct lighting especially bright colors is kinda an eye owie in my mind.
The wood frame would direct the light up to the bottles and you would not have a big wash out effect by having too much light pointing right at you.

But then I like a soft glow so others may have a different take on this.
Plus you are going to need to build different levels for your booze shelf so using wood would be a more easy way to build this thing.

Just be sure to make the Plexi able to be lifted right out of the shelf frame because you will need to be able to clean this shelf often, and even change the lights every now and then.
I would just build long boxes that stack right next to each other, the whole thing could be lifted and moved, cleaned with ease.
Or even added to.

NOW you could have smallish holes in the front of the wood shelf part that would face people and even put resin tiki that would glow the same color as the lights under the bottles.

That might be cool.
