Clairin - the raw and grassy cane spirit from Haiti - is so new to the U.S. market, there aren't many great recipes out there yet. It's fine in small doses, but not easy to employ as the centerpiece of a cocktail. That all changed when I discovered 96 Tears, a simple Daiquiri riff by Nathan Robinson. Lime juice (3/4 oz), orgeat (3/4 oz) and Angostura bitters (3 dashes) pair perfectly with 2 oz of Clairin. I love the blend of funky, sweet, sour and bitter flavors. Four out of five stars.
