Here's my latest offerings
Xtabentun Cocktail

1 1/2 oz Xtabentun
1 oz Lime Juice
4 cubes Pineapple
2 large ice cubes
Stir - don't muddle
4 oz Club Soda
Garnish with a slice of orange.
Can someone shed some light on this type of cocktail? That's a lot of Club Soda and why isn't the pineapple muddled? Could this liqueur/ lime/club soda ratio be used with other liqueurs?

.50oz Pierre Ferrand 1840 Cognac
.50oz Wray & Nephew Overproof
.25oz Cruzan Blackstrap Rum
.50oz Campari
.75oz Pineapple Juice
.50oz Lime Juice
.25oz Passion Fruit Syrup
.25oz Demerara Syrup
A little spirit forward for my personal tastes but very good.
Swamp Angel

1 oz Pineapple Juice
1 oz Lime Juice
3/4 oz Green Chartreuse (Unfortunately I had to use Genepy and it wasn't as good)
1/2 oz Orgeat
1/2 oz Falernum
1/4 oz Allspice Dram
2 dashes Angostura Bitters
Garnish with mint
