Passionola_Roof-Raiser_h

The Roof Raiser (1943) featuring Passionola, the trademark gold passion fruit cocktail syrup made in small batches in San Diego by the fine folks behind "Fassionola: The Torrid Story of Cocktails' Most Mysterious Ingredient" (2024, Classic San Diego Books). It's far and away the next best thing to a homemade syrup. Thanks to barman extraordinaire Doc Parks for resurrecting the historic recipe with authors Gregorio Pantoja and Martin S. Lindsay. ROOF RAISER (Skipper’s, Seattle, Wash., 1943)

½ ounce lemon juice, ¾ ounce Passionola Gold, ½ ounce orange curaçao, 2 ounces dark rum

Blend with cracked ice and pour unstrained into a rocks glass. Garnish with a pineapple cube, cherry and mint leaf.
