If you are already planning Mai Kai and Coral Castle, you are covering some true classics, so that is a great start. I would definitely add a walk through the Art Deco area in South Beach and maybe a stop at Vizcaya since it gives a completely different historic vibe. If you want something quirky, an airboat ride in the Everglades is memorable and feels very Florida. When we did a similar trip, we used sallimoservice to move between spots and it made the schedule much easier to manage.
