I am trying to run down some info on the Donn Beach recipe for the Pi Yi cocktail. The last post on this subject was in 2009. I decided on a new post.

I have Jeff Berry's recipe for the Pi Yi from his book Intoxica. In that recipe he calls for "blend with 8 ounces of crushed ice for one full minute." It seems to me that "one full minute" will reduce that ice to water. Any thoughts from anyone?

It also seems to me that anyone wanting to become proficient with Tiki cocktails needs to become an expert on handling crushed ice in a blender. I think I'll do some practice sessions with ice and water, omitting the expensive ingredients.
