A couple of our checks bounced, our suppliers pulled our lines of credit & insisted on cash payments for each delivery, we came up short & were out of business. I'd sugest hiring a successful Executive Chef/Manager to sweat the day-to-day stuff for you. Someone who's dealt with the problems your gonna face already so you don't have to. I'd expect the money men to insist on it.
