I recently obtained a bottle of Trader Vic's Mai Tai Concentrate (For the uninitiated, the store-bought stuff is Trader Vic's Mai Tai Mix, and the concentrate is used only in their restaurants). I am trying to determine how best to utilize this bottle of concentrated gold. When I use the standard TV mix, I combine the following ingredients: 1 oz. Dark Rum (usually Meyers) The recommended recipe on the bottle of concentrate is: 1 oz. Dark Rum The concentrate recipe clearly has far less volume than the mix recipe, and is likely to be more potent. And I still can't get it quite like at the bar. Do any mixologists have recommendations? |

You should have 1 oz of fresh lime. Shake vigorously with crushed ice- the concentrate requires the crushed ice for additional dilution. Let it sit for a minute after you make it so the glass frosts- it get better. |
