Just bumped into this. I used to check, regularly, the site from whence it comes but had not in a while.

What, pray tell, is "Zest from 10 limes?" Anyone have an idea?

That second recipe sounds like a tragic misunderstanding or a cruel hoax. How in the hell could a tablespoon of almond extract or a half oz of cloves have any perceptible effect on 9 gallons of rum, 3 gallons of lime juice, 12 gallons of water, 1 gallon of milk, a 1/2 gallon of brandy and
56 lbs of sugar? Bizarre recipe.

The first recipe sounds interesting tho...

The "zest" is scrapings from the rind of the fruit. Go to any cooking supply store (e.g. Williams Sonoma) and they'll have a tool called a zester which is designed to take the outer layer off the fruit.
Then, squeeze the limes and have a drink or three.

Ahhhhh, Pablus! Should've known I could trust you on this one. I was, actually, hoping you'd respond as I was posting it. Thanks for the third (not to mentioned Tried and Approved) recipe! I hadn't seen that post before.
