Thanks Kevin. Finally got some O.F.T.D. and currently enjoying a Pineapple Express (without Elemakule bitters). Next time I may substitute "spiced bitters," 1:1 mix of Angostura bitters and pimento dram.

Nice, sounds like a good way to get some extra spice notes into the cocktail. I do think it still works w/o the bitters but it has just a little less depth of flavor.

Love your podcast, Kevin! I've been binging the past month or so and just finished that Caliche episode. Another couple weeks and I should be caught up with you. I appreciate all the work and research you put into this--it's opened my eyes to a bunch of rums I might not ever have considered before.

That's a good question - I don't think I've updated the substitutions page in the last 12-18 months. I'll work on adding some of the more recent rums on the market.

As I think I said on the show, I’m biased because of my experience at the Rumpus Room, but I think the approach Tom and Kelly took with the book was a fun one...get your guests involved, use what you have, and have some fun!
