Polynesian Grilled Pork Recipe

Having a Tiki/Quasi-Luau event sometime this summer for some friends. Has anyone made polynesian style pork on a weber? I suppose cooking the pork "low and slow" like BBQ is part of it, but any suggestions on spices/sauces/marinade/ type of smoke chips or anything else? |

We made some Hawaiian-style pork a month or so back. This is the recipe we used. It's from a popular (albeit non-tiki) cable show and turned out delicious!!! I'd almost say it was even better than when we cooked a whole hog a couple summers ago. 5 pounds fed 4 adults and 4 kids. We had no leftovers. Ingredients: Directions: Heat to be maintained at about 325 to 350 degrees F. Trim any excess fat from the butt roast. Make several shallow long cuts along the roast or pierce liberally Wrap the roast with banana leaf. Cut the ribs from the ti leaves and wrap over the banana leaf. Substitute aluminum foil, if ti leaves are not Roast for about 45 minutes per pound. When meat is done, remove ti leaves, banana leaf and shred |
