menu pricing - Tiki Drinks and Food

In this I have made it more economical, easier to learn and included many new recipes many of which are my own. In total this is about 50 cocktails for which I have written the actual menu, cheat sheets and will be doing the training. I have given the manager the menu with each cocktail with a blurb but I am withholding the specifications and training until payment. I am wondering what you charge for all of this to make sure I am not asking for to much. Thank you.
