I called Guest Relations at Disneyland, and they said that the Enchanted Tiki Room re-opening date is still scheduled for Saturday March 12. They also said that sometimes when a ride refurbishment isn't completed by the scheduled re-opening date, they won't change to the new date until the day before - this has happened on more than a few rides.

I did note that on the Disneyland calendar that a bunch of rides closed for refurbishment are scheduled to re-open on Friday March 18, something like 7 rides. So it could make sense that the Enchanted Tiki Room could open around that time as well.

So I guess only time will tell if they will actually make the Saturday March 12 date. Luckily I have a flexible schedule, so I can pretty much make any date, but if it re-opens on a weekday then I will most likely have to travel down there by myself, because my fiance will not be able to take time off of work for that event.
