Some easy woods to carve for a beginner are cabbage or sabal palm. it doesn't need to cure much at all. It is fairly soft but stringy. Great to learn on and plentiful in Florida. Hang ariound tree trimmers, they will usually give you wood from their jobsite and they will be glad to how you the best woods to use. Good luck, have Fun and take lots of pictures.
