Glad to see you back at it Swanky.
You are making some good progress. Keep the pictures coming. One thing that may help you from losing a chunk from an area you wanted to keep: try using the bigger chisels for removing big amounts but when approaching the edges you might try switching to a smaller chisel and lighter weight mallet. That way you can take smaller bites from the wood and hopefully avoid a scar. I know we all like to carve deep and it is definitely a good thing but we must remember this also: " you can always take off more wood but you can't put it back on".
Stay with it and you will be done before you know it.
