mixology beginner questions - Tiki Drinks and Food

Why not just pour out the ice and drink from the shaker? Seems like you double the ice. Burning question #2... How do you learn how to float stuff? I've been floating 151 which you can't see if it floats, but I made an Atlantic Breeze today, which has you float grenadine... and.... STRAIGHT to the bottom! Help!!!!
