There's a few rum bars, especially this one, from the 30's : http://www.larhumerie.fr/ (the Accra, a kind of fish fried are wonderful and spicy).
There may be other exhibitions, have a look on tikicentral or look around. But Le Quai Branly is the place for Oceanic Arts in Paris.
A good liquor store for rum and wine is Lavinia (3 boulevard Madeleine) : http://www.lavinia.fr/LaviniaFR/ They have an all floor of liquors. (But expensive). Have a look first on regular stores, such as Monoprix and others. French buy their rum in Supermarket or general food store.
