Here is the way to do it: take a bout a cup of sugar and slowly add small amounts of boiling hot water, stirring all the while, until all sugar has dissolved. then you can flavor it with extracts available at any supermarket (usually in the "spices" section). For Orgeat, use almond extract. For Rock Candy syrup, a little Vanilla.
