They will not all show up at once. That's why we have a 1 1/2 to 2 hour window for each room. Expect a peak at about the first half hour, then people straggle in. Serve until your ingredients run out or the crowd thins to the point that you decide to close up. Unless you decide to serve as part of an after hours party, then you get a bunch right away. |
