I love Eggplant Parmigiana, you use my secret ingredient (In my case Sweet Vermouth) in the sauce, I'll substitute red wine when I am out of vermouth, also if you have to use canned Tomatos I have had good luck with Progresso Brand, but Pomi is a good way to go, not to many stores in my area carry it though, I do make the effort and crush my own roma tomatos which I grow in the garden when time is not an issue.
