The cheese and gravy form a gooey mass, while the fries underneath stay crunchy. The dish is served in styrofoam dishes and eaten with plastic forks. It has to be eaten as soon as it's made; the texture isn't as good if reheated. Soupe aux Pois Jaunes -Pea Soup MDM,this is very close to the Danish Recipe, I am wondering if the roots of the dish come from Danish settlers in the far north?
