I've never seen one used but they are a plywood box lined with sheet metal. A whole pig is butterflied and dropped into the box and hot coals are put in the lid. The top of the pig is in contact with the hot lid, creating a nice crisp skin and the rest of the meat cooks from the heat trapped in the box. Mmmmmm... crispy BBQ pork!
