Jumbo shrimp - I thought that was an oxymoron? It looks delicious, I wish I wasn't allergic!!! Mrs MadDog made "Gringo Enchiladas" - shredded chicken, PEPPERJACK CHEESE, cream cheese, in a flour tortilla and smothered in green enchilada sauce.
