the trick is letting it cool completely. make your 3 layer cake. icing it how ever you want it to look when your done... just ignore the mouth completely for now. once it's at room temp. put it in the fridge for about 2 to 4 hours... take it out and find the top of the second layer use that as your starting point and with the longest chef knife you have cut your wedge mouth out top cut down ward and straight in for the bottom cut ( it will help to dip your knife in hot water) do not go more then 2 inches in the cake. once it's done you can let it return to room temp to serve. it will hold up just fine.
