I don't know if anyone caught the Cooking Channel's recent Food(ography) episode on cocktails that included a great feature on Martin Cate & Smuggler's Cove. In that segment Martin made a flaming bowl drink that included an ice cone with a flaming garnish on top. Here's a very similar clip, this one from Tiki Oasis, where Martin demonstrates how to make a flaming garnish:

That clip catches Martin in the middle of his demonstration and misses the part where he discusses exactly what that flaming garnish is made from. It looks like it might be a crouton cut from a piece of stale bread (from something like a baguette or ciabatta loaf) that's been soaked in 151. Does anyone know what Martin uses to make this great presentation?
