How To Make A Flaming Garnish?

I don't know if anyone caught the Cooking Channel's recent Food(ography) episode on cocktails that included a great feature on Martin Cate & Smuggler's Cove. In that segment Martin made a flaming bowl drink that included an ice cone with a flaming garnish on top. Here's a very similar clip, this one from Tiki Oasis, where Martin demonstrates how to make a flaming garnish: http://www.youtube.com/watch?v=n72It5df-gA That clip catches Martin in the middle of his demonstration and misses the part where he discusses exactly what that flaming garnish is made from. It looks like it might be a crouton cut from a piece of stale bread (from something like a baguette or ciabatta loaf) that's been soaked in 151. I buy mine at Smart and Final. They sell it in a 16oz bottle and it's fairly cheap. |

There is a lot of alcohol in Pure lemon extract,but it burns with a different color then 151 rum. |

Just let 'em thoroughly soak in the pure lemon extract and then they're good to go. |

Yep, croutons soaked in either 151 or lemon extract. The 151 will give a bluish flame and the lemon extract will be more of a yellow/white flame. And a lot taller flame than the 151 so be careful!! I've recently started using the lemon extract and I've found the best method is to soak the bread or crouton in it, and also soak a sugarcube in it. Place the sugarcube onto the bread/crouton and light. This combo gave me the best height flame with the best longevity of burn. |
