I believe they use Funkin puree. http://www.funkin.eu/funkin-professional/passion-fruit Available from restaurant/bar supply companies. I use Auntie Lilikoi Passion Fruit Syrup from Kauai. She makes it herself and will send you 4 bottles in a flat rate box.
