My Mum was a wonderful cook (exactly unlike myself), having done a cordon bleu course back in the day - so she knew her stuff! She used to swear by her Rum substitution trick, and would tell me every year that Brandy is too delicate and doesn't provide the depth of flavour that Rum will. She was right too. Rum xmas pudding sauce kicks Brandy sauce's arse..
